It's been a while since you heard from us through this channel! Don't worry, we haven't disappeared. Quite the opposite: we've had a very busy 2022 and 2023 is shaping up to become as busy. We're so delighted that people are finding their way to St Mullins and to Mulvarra House.
According to the old Celtic calendar, after the 1st of February, or Imbolc as the feast was known, we are now passing from Winter to Spring. As the sun resumes its upward climb through the skies we also find ourselves transitioning from the Winter mode of receptivity to the Springtime mode - first of gathering and then later of budding.
If 2022 has taught us anything, it's that people are more than ever looking for connection: with others, with themselves, with their surroundings, with what they eat...and sometimes in order to do that, you need to step away from the place and the people that you spend most of your time with. Not because you don't love that place or the people in it, but because stepping away from the familiarity of it can bring you back to yourself: not the role you might sometimes feel you're inhabiting but just you as an individual. Relearning about who you are, what's important to you, what you need. That's not only helpful to you, but also for the people around you, the people that you love and that love you.
A retreat, no matter what sort of retreat, can do just that. And we're blessed to be able to offer you that time for yourself. So read on and see what we have in store for you in the coming weeks and months. And with Pancake Tuesday in mind (and with the fact that we are holding our Yoga and the Joy of Mindful Cooking Retreat), a special pancake recipe for you to try out. Enjoy!
Much love from St Mullins,
Tim & Linda

Lemon ricotta cloud pancakes
One of my favourite pancake recipes, from Anna Jones. It's a bit more work than your regular pancake batter, but definitely worth a try!
250 gr ricotta 125 gr plain flour (or almond flour, or a combination) 1 tbsp baking powder pinch of salt 2 organic eggs, separated 2 tbsp caster sugar 200 ml milk (any plant-based or regular milk) grated zest of 2 lemons grated zest of a small orange
Put the ricotta in a sieve and leave it over a bowl for about 10 minutes to allow the liquid to drain off. Mix the flours, baking powder and salt in a large bowl. In another bowl, whisk the egg whites until frothy, then add the sugar and whisk till you have stiff peaks. In a jug, whisk the egg yolks with the milk. Add to the flour mixture bit by bit, beat until smooth, then add the zest. Using a spatula, gently fold half the egg whites into the mixture. Then fold in the ricotta and then the rest of the egg whites. It's a very light and fluffy batter. Fry the pancakes in non-stick frying pan (with either butter or coconut oil). Serve with whatever you like. Enjoy!
