Strawberry crumble

Ingredients

  • 800 gr strawberries, hulled and but into halves and quarters
  • 100 gr + 3 tbsp light brown sugar
  • grated zest of one lemon
  • seeds from vanilla pod or tsp of vanilla extract
  • 100 gr ground almonds
  • 100 gr oats
  • 2 tbsp poppy seeds
  • grated zest of one orange
  • 100 gr cold unsalted butter or melted coconut oil

METHOD

I usually make this Anna Jones recipe with coconut oil but you can use cold butter as well. It is not as heavy as an original crumble, but still delicious! I’ve also made it with plums, works perfectly. I imagine rhubarb would be lovey too. Serve with some yoghurt or ice cream or eat straight from the dish!

Vegetarian and vegan if you use coconut oil instead of butter

  • Preheat the oven to 200℃.
  • Put the strawberries in an oven proof dish with the 3 tbsp of sugar, the lemon zest and the vanilla seeds or extract. Mix well.
  • In a bowl, mix the ground almonds, oats, poppy seeds and the sugar in a bowl. Add orange zest.
  • Pour over the coconut oil and use your fingers to rub the mixture together.
  • Pile the mixture on top of the strawberries.
  • Bake for 25 minutes (or more, you want a golden top)
