Ingredients
- 300 gr grated carrots
- 100 gr grated apples
- 140 gr oats
- 100 gr buckwheat flour
- 100 gr raisins
- 1 tbsp chia seeds
- 1 tbsp cinnamon
- 1.5 tbsp coconut oil
- 4 tbsp apple puree
- 3 tbsp maple syrup
- 2 tbsp honey
- 250 ml almond milk
METHOD
Another Deliciously Ella recipe. The ‘dough’ is quite wet, so I leave them in the oven a lot longer than the original recipe. Also, they don’t rise as ‘normal’ muffins do (there is no rising agent like baking powder in these muffins) so fill up those muffin cases!
Makes 12
Vegetarian and vegan (but use agave syrup instead of honey)
- Preheat the oven to 160℃.
- Place the carrots, apples and all the dried ingredients in a bowl.
- Melt the coconut oil and add it to the bowl with all the other ingredients. Mix well.
- Scoop the mixture into 12 muffin cases. Fill them up!
- Bake for at least 45 minutes.
- Let them sit for 10 minutes in the tray so they can finish setting.
- Take them out of the cases and leave to cool for at least 20 minutes.
